Comfort Food Days || A creamy mac & cheese recipe, perfect for at-home dining

If you haven’t completed or exhausted your comfort food list yet, macaroni and cheese is a classic tried-and-true favorite that kids love, too. This rich, hearty dish is perfect for at-home dining, and casual enough to serve from the top of your kitchen island, dining room table, or buffet style from your server. It’s great as a main course, side dish, or brunch go-to – and you can double the recipe to feed larger groups. Delicious as a lunch leftover, it pairs well with a salad of mixed greens, tomato soup, and crunchy pickles.

Ingredients (serves 4):

  • 1/2-lb. elbow macaroni cooked al dente (shells or cavatappi are other options)
  • 2 cups of cheese sauce (see below)
  • 1/2 cup of freshly grated cheddar cheese (fontina, brie, gruyere or gouda work well, too)
  • 1/2 cup of freshly made bread crumbs

For the cheese sauce:

  • 1/2 cup of grated cheese (note: pre-packaged shredded cheese is OK but doesn’t melt as well)
  • 2 tablespoons of butter
  • 2 tablespoons of flour
  • 1 cup of milk, heated
  • 1/2 teaspoon of salt
  • 1/8 teaspoon of ground black pepper

Directions:

  1. Preheat the oven to 375 degrees F, and lightly grease a 1 & 1/2-quart casserole dish.
  2. Cook the pasta al dente, according to package directions. Drain and set aside.
  3. For the cheese sauce, melt the butter in a medium saucepan over medium heat. Blend in flour, salt, and pepper, stirring constantly for 2 minutes.
  4. Slowly add the milk, continuing to stir for a few minutes, until the sauce starts to thicken. Remove from heat and add the grated cheese, stirring till it melts.
  5. Put the cooked pasta into the casserole, pour the cheese sauce over it, and mix gently with a fork.
  6. Sprinkle the rest of the grated cheese evenly over the top, and spread bread crumbs over the cheese.
  7. Bake uncovered for about 30 minutes until the top is golden brown, and the sauce is bubbling. For an optional gourmet touch, sprinkle fresh chopped parsley or crumbled bacon on top. Enjoy!
